Yeast is critical in Beer Making. It plays an important role in converting sugar to alcohol, a process known as fermentation. This is the process that creates that flavor of beer and how it isn't different from other drinks. Different from Wine yeast, not all yeasts are created equally. The genotype of your yeast (type of yeast) can also change which beer styles you produce and how they taste. A yeast genotype primer.

Each type of yeast has a unique genotype. When it comes to brewing, two distinct types of yeast are used: ale yeast and lager yeast. Ale yeast ferment at higher temperatures — typically 60 to 75 degrees Fahrenheit. In contrast, lager yeast performs optimally at cooler temperatures, around 45-55° Fahrenheit. The aroma and flavor of the beer will vary depending on the yeast variety. A more common-specific example is that with some ale yeasts fruity or spicy notes may come up but others are otherwise more mild and subtle. In the same vein, certain strains of lager yeast make for a crisp and clean beer while others will contribute to a heartier malt-forward flavor. Knowing that there are different types of Yaohai yeast can help a brewer choose the right kind for the particular beer they would like to make.
